I love the Lean Cuisine Paninis, so I thought I would make my own. It's really simple to make, and only takes a few minutes. I used different brands of the foods listed, so the nutrition facts are not the same. My panini was under 230 calories.

Very yummy!!! Could substitute unsalted butter to cut more sodium and wouldn't sacrifice flavor. Broccoli is optional, but makes the meal more filling (and even healthier) To make gluten-free, use cornstarch and water/chicken broth for thickening agent instead of butter roux and serve over rice noodles instead of angel hair.

This recipe is higher in fat content than others, so this would be a "cheat" day, or you can substitute turkey bacon bits and non-fat half and half. (If you use turkey bacon, you will have to use a dash of oil for your vegetables)
