A little twist to the typical cheese crisp recipe. I didn't have parmesean on hand and so I doctored up the recipe with what I hand on hand and to suit my tastes!
using cauliflower instead of couscous to save on carbohydrates--yum!
If you are tired of eating the same thing day after day while in phase 2 of the hCG diet, this recipe is a nice break from the norm. It's nice and spicy and very filling.

This was originally a Publix recipe that I altered just a bit by adding more vegetables and using Dreamfield pasta instead of regular pasta. Dreamfield pasta, if you aren't familiar with it, is very diabetic friendly, with a low glycemic value. Pasta was something that had all but been cut out of our lives, both of us being diabetics, but no more. Total cooking and prep time, about 30 minutes if you chop the veggies yourself (instead of buying them already prepared).
For those of you doing the HCG diet or Atkins, this is a nice little treat. We're always working and tweaking recipies to make them better. This is where I am so far on this one. Hope you enjoy.

This recipe was influenced by others I saw on the site. The main difference is this one uses toasted wheat germ. The toasted wheat germ coats the chicken enough to help it maintain its moisture without having a very heavy coating. As my son said, it doesn't even seem like the chicken has breading. My whole family really liked it and I hope yours enjoys it as well
