Vegan noodle dish that can be eaten warm or cold. If you want to add protein, it tastes great with some shredded chicken or stir-fried tofu. Heavy on Vegetables, light on noodles, but there's plenty of sauce if you can spare the calories and want to use up the whole pouch in your bowl!
Inspired by, Alicia Silverstone - from "The Kind Diet." I omitted the oil and made a few small tweaks to the ingredients. Vegan and Gluten-free.
Fry bacon, then crumble. Sauté onions, celery and carrots in grease until tender. Add fennel seeds and garlic and cook on low fit a few minutes. Add broth, potatoes and tomatoes, and salt and pepper to taste. Cool until potatoes are done. Add shrimp and cook for 10 minutes. This is good as soon as you make it, but it’s much better the next day.

Yummy, easy, nutritious. Also add salt and pepper to taste. Chili flakes would be nice too if you like spice.
