This is a great lunch or light dinner! I had seen it before, but have made some changes to make it healthier and used what I had on hand.
Add a little umph with a not so bad dressing! Up the heat if you want something more interesting. Add some chopped peanuts for garnish. This was a CL recipe that i modified to fit what was in the house!
This salad is perfect for lunch, it will last you until dinner for sure and it's more than delicious. If you want it lighter of course you can take out the sour cream and wallnuts but if you only eat this for lunch you shouldn't worry.
