I remade a recipe to cater to our preference for Spanish food flavors. This is wonderful with crackers, on a warmed corn tortilla with cheese and vegetables, added to a salad. Everyone who has ever tried it has loved it.

This recipe is from The 6 - Day Body Makeover Book. There is a slight difference in the recipes. My recipe has salt, garlic cloves and celery added and 1/4 cup more water.
This may not sound very good but it is. It really tastes like chicken enchiladas. The hominy sort of tastes like corn tortillas once it is mixed in with the other ingredients.

A great filing of Black Beans, Beef and salsa that can be used to make tacos, burritos, enchiladas, tostadas, nachos- or anything else you can think of. Eliminate the Beef and saute the black beans with the salsa and cumin and you have a great vegetarian dish.
