Prepare 24 hours ahead and refrigerate.
You can make 2 casseroles and freeze one if you like.
The recipe calls for 24 hours, but I've made it in the morning and served it that evening. I usually plan to serve 8-10 healthy appetites.
These Nacho's are delicious! I cut some of the fat by using fat free milk and mixing turkey into the meat. Hope you like them.
Pleasing to the eye and the tummy =)
Cool, spicy, tangy and addicting.
Tip: Doing this for a picnic? DO NOT THAW THE CORN! It will thaw by the time you need it and help keep the salad cool!
Hint: If you can't find the canned "diced tomatoe & green chillies" simply substitute w/one tomatoe and another quarter of that jalapeno pepper.
Great to prepare the night before a picnic :)
Best part of this recipe is it's not an exact science. Eyeball it and play w/the vinegars! I prefer more cilantro & jalapeno for a more "Mex" and less "Tex" taste!
Wondering what to do with leftover corn on the cob? This is delicious if you like cilantro.
This is a recipe that I found in a magazine and adapted to be lower-calorie. I cut the meat with black beans (you can actually eliminate the meat and only use beans--it's still delicious), and used nonfat yogurt instead of sour cream.
1 serving is 1 cup. Yummy and simple, in preparation and in flavor.
Maybe cause I'm on a diet but these are so good. Adjust salt if necessary also leave out Jalapeno if you don't want it spicy.
