A quick and easy muffin recipe using flaxseed meal. Great for a mid-morning snack or breakfast on the run.
I would like to try this recipe with ground poultry or bison. This dish is protein and carb combined, so just add some veggies. I like with herbed, diced tomatoes on top with some steamed or roasted asparagus (see recipe in cookbook) on the side. YUM!
Instead of buying canned beans I make these and stick them in the freezer. I pound package dry beans equals about 3 cans bought only without all the bad stuff, like sodium and such.

My neice uses coconut flour so I decided to try the pancakes. They are really good. Gluten free, soy free, low fat and carb, and sugar free. You can combine coconut flour with regular flours as well. Makes 16-3" pancakes/4 per serving.
