If I have the time I will roast the red peppers under the broiler in the oven and remove skins. But this tastes delicious even without roasting them. If you roas the peppers put them in the pot with the broth and the tomatoes.

This soup is very hearty. You could substitute the 1/2 and 1/2 for skim milk if desired. I used coconut oil for cooking the chicken, but if you poach them, you can take out that extra fat too.
This soup is hearty and you will never realize that it's good for you. It's very filling and I love to make a big pot of it when it's super cold outside. I always make sure to keep some of this in my freezer for days when I don't feel like cooking.
A nice summer salad that is a great dish to bring to an outdoor party... or to eat any time of the year. This recipe was modified from a full fat version and it tastes quite nice without that extra fat! The original recipe also called for baby spinach but not everyone likes spinach (like my dad). I did some checking on the comments on my dressing. to those who think corn syrup is bad try looking up a possible side effects list? whatever. i checked to see if there was any fat in it. ???? not. and if you want to use the following if you are really scared here's the comparison
corn syrup 60cal/tbs 16.3 carbs
Honey 64.4cal/tbs 17.5 carbs
Brown sugar 51.7cal/tbs 13.4 carbs
just a side note try looking at a label in a store bought oriental dressing to see what's in it and compare the cost that will convert you to homemade dressings in a hurry :)
