A lighter version of a yellow squash casserole that my sister made, yet just as buttery & cheesy & hot delicious as the original.
I saw Aaron McCargo Jr. (Food Network) make this on the Food Network and thought this could be tranformed into a lower sugar form of cranberry sauce. It could have been almost sugar free, but I couldn't find sugar free dried cranberries.

Place greased iron skillet into 400 degree oven. Mix dry ingredients. Stir in oil and buttermilk and eggs. Stir in corn. Pour into hot skillet and bake for about 20 minutes. Check doneness and cook until top is light brown.
You can make fluffy omelets in very less time than you may think. Enjoy them for breakfast or a casual supper for a protein rich meal.
