I love these because you can change it up for how you feel. Sometimes parsley and red onions, sometimes dill and lemon with white wine vinegar. They are tangy and satisfying.

This casserole is so sweet that it could be thrown in a pie crust and served as a dessert! My mother-in-law made this for Thanksgiving and I demand that she had to give me the recipe.

I LOVE THIS SALAD. I ALWAYS MAKE PLENTY B/C I CAN EAT IT AS A SIDE DISH OR AS A MAIN DISH OVER A BED OF LETTUCE. IT'S FRESH AND COOL. AND VERY FILLING. MY KIDS HAVE ALWAYS LIKED WHEN I MADE IT TOO.
