This was a dish that was brought to us after we came home from the hospital from delivering our daughter. I have adapted it somewhat and this has become a staple meal in our family. We always have grilled paprika chicken. You can change the seasonings and cheese blend up to make this dish uniquely yours.
Good for cookouts and barbecues. Relax or concetrate on other activities while this cooks. Be sure to rinse and drain the pinto beans several times to reduce the sodium content before adding to the pot.
I saw this recipe on a low carb show a while back. I like it because it really cuts back on the carbs of real rice and you can add an egg roll from your local chinese place for a quick meal.
