Even with the lower stats, this soup is incredible! You could leave out the butter, but I don't think that replacing the bacon with turkey bacon would work well.

This is one of my favorite recipes. It is so easy. When you have a few cans of beans and broth and not enough pasta to make a meal for everyone this is the perfect solution. You get fiber and taste! I do suggest using the low sodium varieties of the beans and broth to keep your sodium in check if that is a concern of yours.

Adaptation of a recipe from a friend who adapted it from Jamie Oliver.
If more protein needed, add silken tofu or cannelini beans before pureeing. Also good with a few caraway seeds, or use a leek instead of the onion. If you don't have mint, use a smaller quantity of another herb that you like.

Flavour improves with time in the fridge!
