This is my husband's recipe for vegetarian black bean burgers. He is a staunch meat-eater, and he loves these burgers because not only do they taste good and are healthy, but they also have a good texture (they don't crumble like some veggie burger recipes).
This is a super fast breakfast. Make it your own by adding veggies or bake it in a prepared pie crust.

I sometimes make some Maple Sausage Patties to go with it, but it's just great by itself, too. I also make this for dinner, but it's a great breakfast. I also add A LOT of broccoli to mine, but start with 1/2 of a 10oz bag. For some people that might be more than enough.
This recipe is much easier that it looks because the beans and vegetable stock are just 1 can each but it would not let me put that. This is a great make ahead to use for lunch all week or to make burritos to freeze. This filling is not bland at all and super healthy.
All natural ingredients, great as an appetizer, side, snack, or dessert! The taste & texture is fun and different.
M\y children will eat this. I can hide a lot of vegetables in this dish and often serve it with baked salmon.

This is not your average pancake, this is one that my family enjoys and is baked in the oven. It makes a nice treat for any meal, not just breakfast. This recipe makes about 6 servings, which works well for a family of three or family of four. If making for two people just cut recipe in half.
This is one of those "Gosh, we're broke. What can we make out of what we've got that the kids will actually eat?" Voila! Serve with fancy sauce/Russian dressing, and it's a meal.
Mind you, each serving probably contains about 1 tbsp of oil, but you will need more like 4 cups total in order to deep fry. You can bake them instead if you want to, and eliminate the oil altogether. I imagine they'd be almost as tasty. They're really filling, either way.
My daughter says it tastes like a black bean burrito with lots of tomatoes. The hominy adds a nice flavor, likened to a corn tortilla.
So...good. You will need an immersion blender or at least a regular blender to make this soup!
I am not a fan of stuffed cabbage. I could sincerely take it or leave it. However, my mother loves it. We happened to have a cabbage that needed to be cooked. I was not sure what to do with the Gimme Lean, so-voila.

After a day of feasting for my birthday, I wanted to aim for a vegetarian type dinner. My kids are fans of falafel so I figured this would be a nifty way to introduce them to more beans. The nugget shape is also great for dipping-and you can dip it in whatever you'd dip chicken nuggets in.
Had eggplant. Wanted to try to recreate kind of a sesame chicken but with eggplant. This is what came of it, and it's MIGHTY tasty. The sesame paste and almond butter is to add protein. Under 500 calories per serving
Garlic so nice, you gotta say it twice. We're using it as a hot day meal. Uses toasted sesame oil instead of olive oil.
