This came from my Mom via my sister in law Kim. She doesn't ice them, but rather decorates with some colored sugar for the holidays. First time out I made the frosting too thick - it should be more of a glaze so I'll give it another shot. (I halved the whole recipe, but did not do so with the powdered sugar - oops -they were still tasty!)
A treat for under 100 calories. I wanted a cookie that was a little healthier and easy to fix. You can make more healthy substitutions to suite your taste and health needs.
Makes 4 1 cup servings or 8 half cup servings. Very yummy, a little on the high side for carbs, but also high protein for a snack or dessert.

This decadent spiked cheesecake might be our favorite way to use Bailey's--ever. Serve with ice cream or whipped cream and chocolate shavings on top.
