A fresh mix of veggies, shrimp, & imitation crab with a citrus zing. Served as an appetizer with tortillas chips or tostada shells or as a light lunch.
Very quick, easy and "clean" (natural) cajun shrimp and pasta dinner. Delicious as is but also very easy to modify to meet your tastes. Use any seasoning blend, any cheese you like (or skip it) and add whatever vegetables you have on hand if you have a little more prep time.

Wonderful marinade for salmon. Also great for chicken.
After marinating the salmon, put marinade in saucepan and cook on med high for 15 to 20 minutes to reduce. Serve as a sauce for the fish.
I use leftover salmon and cooked marinade with cold cooked pasta for a salad another day. Wonderful!

This was the first way my boyfriend ever tried this kind of fish, and he loved it! The seasonings caramelize just perfectly on the fish. We've put it into the normal weekday rotation since it is so simple, quick and flavorful.
This is an easy dish to prepare and very versatile. I had frozen peas and a red pepper on hand but you could easily switch out the veggies for others you have. Great way to use up items in your fridge.

This recipe is also great using Tilapia. But feel free to use any fish you like!
Use the Peanut Sauce Marinade (See recipe in side items) on the fish to marinate. I'll repeat it here for ease of use.
Please note that the marinade is for eight servings but I usually only use five fillets with plenty of left over marinade. Therefore, you should be able to add more fish to match the size of your family without adding more marinade.
I've made the marinade up and let the fish sit in it while I get the rice and veggies going (10-15min) and I've let them marinade overnight). Both taste delicious.
