I saw a recipe that had shrimp in the mac n cheese and wanted to try it. The greek yogurt makes it sooo creamy!
I wanted to have a healthy dinner that was also relatively cheap so that I could stretch my dinner and my buck. This is what I came up with! Yummy!

-anchovies.html to scale it for two and bump up the broccoli while using some high-fibre pasta for added nutrients! Don't be freaked out by the anchovy paste - it melts into the garlic, pepper and cheese to create a nutty note!
This recipe is adapted from an idea I found in Prevention Magazine. My favorite way to eat it is on Wasa Light Rye crackers - great for a snack or a meal.
Capture the high flavor of shrimp scampi without the high fat. The spinach and tomatoes add color and a serving of veggies to the dish. Using whole wheat or high fiber pasta adds another health benefit. Enjoy!
