Text stolen from NY Times: This spicy fish stew served over couscous is easy to make — don’t let the long list of ingredients deter you — and great for a dinner party. You can use a sturdy white-fleshed fish like monkfish or grouper, or a flakier fish like snapper or tilapia.
I did not put the spices in for nutrition calculation and I omitted 5 t of canola oil (used cooking spray and non stick cookware instead) .
This makes a very moist and flavorful dish. The flavors blend well with the Swai Fish. This marinade is also good on chicken and other mild flavored fish.
Buckwheat is a little higher in calorie than other grains, but it is so tasty and filling too.
I found this at my local Fry's Marketplace. The Mediterranean Seafood Grinder and Chipoltle seasonings were both from there. We've also substituted Fry's steakhouse seasoning grinder for the Mediterranean Seafood Grinder and it tasted great. I've also substituted an olive oil cooking spray for the olive oil and simply sprayed the skillet lightly.
