Don't let the name fool you! This low calorie miso-egg drop hybrid is tasty and filling.
This was recipe was adapted by me on 4/8/08 from Crock Pot Potato Soup. Actually forgot to put chives in but will remember next time I heat it up for me or mom. I had to remove as much sodium as possible since mom is on a low salt diet. We both love it. Mom actually called to me & asked what smelled so good, I told her the soup but it still had 2 more hours of cook time. When it was finally done, she had two servings of it (separate times). Great hit, really liked the leeks – will definitely try them more.
This soup has a kick to it - but you can moderate that by reducing the seasonings. I use low-sodium broth which isn't in the list.
I Love Paula Deen's The Lady's Chicken Noodle Soup, but couldn't take the calories of the whole chicken, egg noodles, cream, sherry and cheese! I created a very delicious comparable soup to hers by swapping out a few ingredients. Enjoy!
Serve in small pumpkins as bowls! Perfect for fall entertaining!

This is a great winter warming soup, great with mixed herbs added too. I'll sometimes blend one third of soup, then return it to the rest, makes it a little thicker.
