A flavorful creamy Instapot broccoli soup recipe. Adjust the seasonings to suit your tastes. I used 2 dashes of cayenne, but "dash" is not in the serving sizes. I also used fresh cracked black pepper - several twists of the knob. The celery salt and butter are almost salty enough for me, but I added a couple twists of fresh ground pink salt. The half and half I used is a new lactose free offering from Organic Valley. I also used the chicken stock concentrate for the stock (1 Tbsp in 3 cups of water), but I couldn't find that in the ingredient search. Enjoy!

This spicy soup is rich even though calories are TINY--1/2 a serving might be enough. But holy nutrition! It's a great way to boost your veggie intake. (It has leftover broccoli stems in it too, but you really can't taste them. So we'll call it carrot soup!) You could make it vegan by using vegetable broth instead of chicken stock. Equally appropriate for an elegant dinner or for weekday lunches. This recipe makes four pints--three for the freezer, one for enjoying today.

This is South Beach appropriate, as well as any of the other low-carb plans. It is also super low in fat. Great for a cold winter day!
