Made this soup one night when I was trying to come up with a recipe that rivaled the Pozole that I get from my favorite Mexican joint.
A guilt-free creamy soup, you can substitute almost any vegetables you wish just insure to keep the potato as that is what gives it the creaminess. The recipe can easily be doubled, plus it freezes well.
This is a great chile recipe from the Buckhorn Exchange in Denver. I've kept it mild by reducing the chile and garlic.
Simmering the soup for approximately 4hrs. causes the sweet potatoes to cook in the soup which gives the broth a wonderful nature sweet taste. YUMMY!!
The original to this recipe was printed in the February, 2009 edition of "Living the Country Life" - I just upped the veggie and whole grain content. I find that it makes a dinner all by itself. A 3 1/2 to 4 quart crockpot is recommended. Don't let the cooking time scare you, it basically sits in the crockpot and cooks itself! :)
