Im my recipe, i used frozen chicken tenders. Add more rice for a main entree or add lettuce, cheese, sour cream, and wheat tortillas for a twist on burritos and melts. You could even slice or dice the chicken if you plan to serve it in tortilla wraps
Traditional paella is cooked for hours. This version is mostly done in the oven, so no babysitting the paella :-) Also, it traditionally has peas (I use broccoli or asparagus as I don't like peas), saffron (you may substitute turmeric if you don't have saffron) and white rice (I use brown). for the chicken, you can use pre-cooked diced breast meat instead of raw boneless/skinless breast. Salt & pepper to taste.
The ingredients in this recipe are really "to taste" (except for the rice and milk). The amount of the others are really just suggestions. The same goes with the cooking time and serving amounts.
This recipe is from Fiber One Cereal website and Eat Better America campaign. I am using it to aid in my volumetrics diet .
