I love omelets so I decided to use egg beaters with one egg to decrease the calories. Use cooking spray to saute vegetables and to cook the omelet instead of butter or oil. Use a non-stick skillet. You can substitute any vegetable or meat (just be careful about the calories of the meat you use). Note:The use of cheese is optional. If you add 1/4 cup of cheddar cheese it pushes the calories to 415. This omelet is huge so I usually only allow myself this on Sunday for a late breakfast/brunch after church.
This saves a lot of money & is a lot healthier than prepared "just add water" mixes. It is so simple to make ahead, you will never go back to those boxed mixes!! I haven't!!
