These cornmeal pancakes smell like popcorn while they are baking and have a delicious crunch. In order to make it healthier I put old fashion oats in a blender and used it instead of wheat flour. I use 1 cup oat flour. I make sour milk putting a cup of soy milk with a tablespoon of vinegar.
This makes a small batch that can be used as an entree with two servings or a pita filling with 3 or 4 servings.

The black beans pureed into this brownie give it fudge-like texture and extra fiber and protein. You will be impressed by the chocolaty flavor and richness. I cut them very small, 5x5 into 25 little pieces making them under 90 calories. Nice treat! And it's a good wheat-free recipe for allergic people.
