I threw this together from what I had in my pantry at the time. With proper planning, I'd use fat-free soup and sour cream. It is delicious as-is, but fat could certainly stand to be cut.
You can put the chicken into the slow cooker while still frozen, so prep time is virtually non-existent! A great choice to throw in before bed for lunch at work or in the morning for that night's dinner.
This recipe calls for two pounds of chicken, also because it was what I had available (three large breasts), but would make a great meal with just one pound, too.
I served this along with brown rice and black beans. Tasty!

I chose to re-make the Crunchwrap Supreme from Taco Bell because Taco Bell used to be one of my favorite fast food restaurants. Also, it is still my boyfriend's favorite fast food chain and nearly every time he goes there, he will order a crunchwrap supreme.
The funny thing is that most Mexican and Tex-Mex dishes are fairly simple to make... so I knew that it would be fun, delicious, and not too challenging to re-make this item!
Use this spicy, creamy sauce on pretzels, on sandwiches or even on a baked sweet potato.
This is my homemade guacamole recipe. I love it by itself, with a Mexican style entree or on a salad!
This was very good and much easier than stuffing the cheese into the chiles, but with pretty much the same flavor of the traditional method. If you don't care for hot food, you could use plain Monterey jack cheese instead of the pepper-jack. For myself I added more pepper.
