A tasty alternative to tacos. Fat free tortillas will reduce the fat in this recipe even more, but I used regular tortillas to calculate this recipe.
Also known in our household as mexican bean soup it is a cold weather favourite with some jalapeno peppers, sour cream and shredded cheese and toasted turkish bread.
I didn't figure tortillas into the calorie count, so that you can choose whether to use corn, flour, or whole wheat. This is from the book "Lean, Luscious and Meatless," but I used lime juice instead of orange juice, as the authors suggested.
This has been a family favorite for years, even our children enjoy it. I finally started making it with Splenda and it's still yummy!

My mom made this for us the other day but used the original recipe, full fat cheese, sour cream instead of yogurt, and regular cream of chicken soup instead of 98% fat free. I was able to shave about 200 calories off per serving with the healthy changes...So tell me how it is everybody!!
This sucker weighs at least 10 pounds. Very Hearty meal reheats great. Perfect Bachelor food.
The Fat is coming mostly from the "Venison" but the deer I get are Super lean so it depends on the deer and I process it myself so there is NO added fat by the butcher.
You can cut the salt way down by using a homemade taco seasoning which I will be posting.
Serve over a salad or with soft or hard taco shells, and garnish with cilantro, shredded cheese, lime wedges, and sour cream (not included in nutritional info).

this is a recipe I found in Sparkpeople but I didn't need the salad only the dressing. It's a quick, easy, lo-sodium recipe that makes a fantastic mexican cuisine night. I like versatility of the recipe. You can change one ingredient and the flavor is totally different.
