Pan seared chicken breast pieces with fresh vegetables and whole grain pasta in a fat-free sour cream sauce
This was adapted from the original recipe submitted by SparkPeople user KAMEL622. I just wanted to try a version with less sodium and carbs. I think its just as good!
This is a family favorite around here so I am glad it is reasonable in the cal department with out any changes though I should warn you one cup just isn't enough so make sure you have enough room for at least two. You can replace chicken broth with water to reduce cals more but be warned you lose some of the flavour.
This is a very simple yet classy appetizer. Low in fat, high in lycopene. Bruschetta can be stored in refrigerator for 3-4 days.
You can make this as tangy as you like with the addition of cider vinegar at the end. Makes salt unnecessary,

Just thought I would try to make my signature french toast recipe using almond milk since on the carton it says that is only 60 calories per serving (less than skim milk) But you can substitute the almond milk for the skim. I also thought the light almond flavor could do nothing except enhance the flavor of the french toast. Came out very tasty and even fooled my husband who is a whole milk kinda guy:)
I like to eat these Sweet Potato "Fries" with a sandwich. It's a healthy way to eat "fries"
