Chicken and vegetables, easy preparation, quick clean up. I threw this together one evening and was very impressed with the results. My husband said this was his new favorite dish! The surprise is that it's so easy, delicious, and your entire meal is done! Leftovers are even better!

This is another mod on a Rachel Ray 30 minute meal. I used laughing cow cheese (only 30 cals each!) instead of the cheese that she suggests along with a little less olive oil. I like to eat this with roasted asparagus or baked spaghetti squash.

Use Turkey Kielbasa or Turkey sausage. Cut it up, plop it in the crock pot in the morning - dinner is ready when you get home!
This is my take on Costco's incredibly yummy Cilantro Lime Shrimp. I like mine with lots of garlic and spicy. You can tone yours down by using less garlic and crushed red pepper. Enjoy!
