This is something I just threw together one day. It was such a hit, I added it to my family's favorites. We sometimes add chicken and make it a main dish. It is a great dish to take to a pot luck too!
This is my favorite recipe for potatoes. You can make it even lighter by using nonfat or lowfat cheese, nonfat sour cream and nonfat milk. But I like a little fat and I used what I had available! LOL
This is to die for on chicken and rice. Not low in fat or calories, but very nutritious and filling; it is high in protein and minerals.

This is so yummy! You can heat it up w/ some shredded cheese if you like on a whole wheat tortilla or have it chilled with chips, or top on a burger!!

Almonds or peanuts would work too and ff you want you could jazz it up a bit with a little freshly grated ginger and a shake of chili pepper flakes.

My family loves pasta salad for picnics. Since I haven't been eating pasta as part of my diet, I would just make it and do without. Well, for Labor Day, I realized I didn't have pasta and decided to use some quinoa I had in the pantry. This is tasty, nutty and HEALTHY!! Your family will most likely NOT miss their pasta. Add green and red pepper, chopped onion, small diced broccolli and cauliflower, cucumber and any garden fresh veggie to make even better!

I LOVE eggplant and Feta cheese together it's a creamy, salty combination. Even my husband who doesn't like eggplant liked this!
