I didn't soak the beans beforehand; I just rinsed them and picked out the oddballs then put them into water (enough to cover by an inch) and boiled them hard for 10 minutes. Then I drained them and proceeded with the recipe. The time to prep and cook may seem long, but it's short for getting dried beans on the table, and most of the cook time is unattended.
My Great Aunt used to make the best & simplest chicken noodle soup there is. She used to make homemade noodles. I don't, but I do try & find the Kluski noodles which are pretty darn close to hers. I also cut the fat by using boneless, skinless chicken breast. She used to use a whole fryer chicken.
This makes a HUGE pot for a very large family gathering. I tend to make it, then freeze in small portions so that I can enjoy it whenever I like. Enjoy!
This soup is made to emulate the tortilla soup at Qdoba's . While this soup is easy and fast it is helpful to have another set of hands. Cilantro was not available when I made it but I think it would add nicely flavors.
