This is an easy quick soup. Can be made in crock pot or on stove over med-high heat for shorter cooking time approx 45 minutes.
Start with Chicken stock
(I make from boiling the "carcass" of a Rotisserie Chicken. Strain stock, throw out bones)
In Stock Pot:
Add Chicken Stock
1 pound frozen corn
1 can Black Beans or cooked from dry
(strain and rinse all the gassy stuff off)
1 can Black Olives, drained, and chopped
1 can Rotel, pureed in blender if you don't like chunks
1 can tomato sauce, or crushed tomatoes
Chopped up cooked chicken (I use Rotisserie chicken)
Season with Pepper, Cumin, Onion Powder, Garlic or Garlic powder, Chicken Base or Bouillon. WHATEVER you like!
Simmer for several hours, or longer, in a stock pot or in a crock-pot.
After done, smash tortilla chips up and place in bowl, ladle soup on top, top with shredded cheese of choice. I used "Colby-Jack"

My mother-in-law passed this recipe down to my husband and I. She used Ground Beef instead but i prefer Ground Turkey. It is very nice on a cold evening.

This soup is an easy to make crockpot soup that can be put in the crock pot in the morning and is ready to eat in the evening.

Super quick and tasty minestrone soup! I could not find a recipe that used a bouillon cube, so I borrowed the basic idea and created my own with canned veggies. The sodium count may be a bit high, but I added the nutrition info exactly as it appears on the cans, but I always rinse my beans and veggies before I use them, so hopefully that cuts some salt out :) Also, I add the brand names of everything I use, because I have noticed calorie counts differ slightly. Feel free to use what you like (Jewel is a grocery store in my area, so when you see that, you know I shop off-brands as well) :) And a final FYI - I like a lot of stuff and less soup, so please don't expect that there will be enough broth to cover the entire veggie mix, so either use less pasta and only 1 can of veggies, or add more water and possibly another bouillon cube.
Delicious chowder-style cream of crab soup. The thickness and flavor come from gravy mix and seasonings.
I was pleasantly surprised by this creamy soup. I wouldn't have made anything with curry if hadn't been made for me first.
