These pancakes are light and fluffy. I have never had pancakes as good as these. This is my own adapted recipe from a blog that I read. These pancakes are addictive, healthy, and SUPER delicious.

This is an Indian version of a savory Cream of Wheat meal that is good for breakfast, lunch or anytime. It is also a very good vegan dish it is quick and easy to prepare. This is especially good when a little Tomato Rasam is drizzled over it. You can find most all of these ingredients in an Indian market - even a quick Tomato Rasam (soup) mix!

This is identical to my eggplant parmesan recipe BUT it serves six instead of four and unlike the other does not include noodles or sauce. Sometimes I just want the eggplant part (or I do not have time to make more noodles) and I wanted a reflection of that in my tracker (i.e. 250 calories less!). Let me reiterate: this is not "diet" eggplant parmesan. This is delicious authentic eggplant parmesan with no "shortcuts." It is worth EVERY bite.

This is a vegetable stir fry for one person. When I make this for my family, I cut up all kinds of fresh veggies and stir fry each person's plate individually. That way each person gets to grab the veggies they like the most and leave off something they don't care for. This also helps the veggies stay crisp cooked. When I do a large family sized stir fry some of the veggies overcook and get soggy. I hate that so now I do it this way.
I usually make 2 stir fry sauces so folks get to choose that too.
The recipe for the Teriyaki Sauce with a red Thai chili sauce in the ingredients is an amount for 1 person's stir fry. I will include amounts for a family at the end of the cooking instructions.
**Dry Tofu is included in this recipe. It is found in most Natural food stores or Chinese Markets. It makes stir fries so much easier because you don't have to marinate or pre-cook it. (It is sometimes called Smoked Tofu. I have used both.)

This is a great alternative to regular tacos. Serve this on WW tortillas with all your favorite taco fixings and you have a complete meal.
Vegetable lasagna is a crowd-pleaser and a classic make-ahead dish. You can use precut onions, matchstick-cut carrots, and broccoli, in addition to precooked noodles, to speed up preparation. If you make it ahead, let it cool completely, then cover and chill. The next day, heat single servings in the microwave. Freeze leftovers for dinner.
This just screams summer to me. I eat this whole bowl as a main course. The best part is it is so filling and only 280 calories for the entire bowl.
