This recipe can be used with chicken as well. Spice to taste.
Make ahead and pop in the oven for 30 minutes. Easy and yummy!

This recipe came from a chicken enchilada recipe, I made some revisions and came up with this. Everyone loves them.
This is a converted recipe from Cooks.comI used Dempsters Smart Whole Grain Tortillas which reduced the calories.I also reduced the cheese by 1/3 of a cup from the original recipe.
