used applesauce for oil
used 4 tbsp ground flax seeds in 12 tbsp water for 4 eggs
used splenda for sugar
very easy to make.......other vegetables like carrots, cauliflower, broccoli, asparagus may be added after pureeing. Also cut up, cooked ham or chicken breast.
Love this recipe. Might be good made with added chicken or beef. Got it out of Taste of Home Magazine. Can't remember which month and year. Comment says: Here's a wonderful zesty casserole that's much lower in fat and easier to assemble than traditional chile rellenos.
