This is a nice sweet 'n' sour stir-fry I thought I'd share, since I just made it and it turned out to be delicious! It utilizes seitan as a protein source, which you can get in most health food stores. Seitan is made of wheat and has somewhat the consistency of chicken, but is vegetarian.
A low-cal, low-fat cornbread recipe...if you like it sweet, you can add sugar or splenda to taste (this recipe, as is, is not sweet cornbread). To make it easy to portion, you can make it in a muffin tin coated with cooking spray...and freeze extra portions.
One of my favorite sandwiches and I am not vegetarian. My husband even likes this sandwich. This sandwich is very filling.
This is one my fiance introduced me to. my 10 yr old child loves it even all the veggies. I love it because it has lots of great veggies so it is good for you but it also has something that you wouldn't be able to eat otherwise----sausage. We like to varie on the sauce from time to time. this is a great recipe for experimentation.
Chili with the hot dogs already in it, simple and very easy to eat. Bun free! The sodium count is lower if you use low sodium broth.
Excellent side dish for steaks...the sauce is as good as any bottled steak sauce I have had.

This is a Better Homes & Gardens New Dieter's Cook Book, Meredith, 1st Ed., 1992, recipe on page 136. I modified the recipe here. I used 2 slices of a thin light multi-grain bread that have a total of 70 calories for both pieces, so I added a 1/4 c. more applesauce
