Found myself alone this weekend and decided to get a bit creative. Came up with this on a whim after looking through ingredients I had on hand. Easy to make, Easy to clean up and VERY yummy! I have enough to eat this for the next few days too since its only me and the filet was so big.

A great way to use up left-over rice sitting in the refrigerator! A few of the ingredients I've used here are not exactly 'traditional', but in the end it tastes wonderful! :) I've worded the ingredient list with generic measurements, but I also weighed my ingredients, and used those to calculate the nutritional information.
