I have 4 boys, who always seem to be STARVING. Plus we homeschool all of them. So I make as much food in advance as I can manage. With this mixture, you can make meatballs, meatloaves, min-meat loaves and use them as a main dish, with pasta, on sandwiches or grinders - and the smaller portions defrost quickly! I usually make one full-sized meatloaf, a 5 - 7 dozen meatballs, and a couple dozen mini-meatloaves - we eat the big meatloaf the first night, and I freeze the rest after cooking, to be used later.
PLEASE NOTE THAT THE COOKING TIME LISTED IS FOR MEATBALLS ONLY
While hefty in the calorie world, these granola bars are full of healthy fats and oils as well as anti-oxidants (and are void of the chemicals in the store-bought brands). I use these bars as dessert rather than a snack...so it keeps me away from the cookies!
Modified another recipe and came up with these. My kids, especially my two year old, loved these. Will most likely use same base and switch up the fruit & veggie combos to create different kinds. When thoroughly cooled, take entire muffin with paper and place into freezer bag. Pop out and microwave in the morning. Combine with a fruit/veggie smoothie and you'll be happy you did!!
