The author said, "This is a recipe that I've tweaked to perfection and everyone asks me to bring to any pot-luck or party. If you can find a market that sells berere (a spice blend) it will taste more authentic. You can find recipes for the spice blend online or see the recipe for substitutes if you are in a hurry. This is usually served with injera, a flat pancake-like bread. If you can't find that you could serve this with rice or pita bread. "
My favorite vegetarian/vegan bbq recipe using whatever sauces I had remnants of in my refrigerator!
This makes a simple but delicious marinara sauce for dipping breadsticks or topping pizzas. I also like this mixed with my scrambled eggs and then topped with mozerella cheese. Double this recipe for pasta.

This hearty casserole is full of healthy vegetables and works well for breakfast, lunch or dinner. The vegetables can be varied to suit your preferences. I have also made this recipe without the ham and it was good. It makes four very generous servings and will pair up well with sliced fruit. Served this casserole recently to family and it got rave reviews! Enjoy.
