Frittatas are basically baked omelettes. Basically, they're great for using up leftovers: spaghetti sauce, vegetables, meats, etc. I used what was "in" that day from our garden. This is vegetarian, not vegan.
I used mostly Great Value brand stuff from Walmart just because it was what I had on hand, but you can really use anything you want.
This is my mom's recipe. but it requires a lot of oil and frying, so tried to tweak it by baking...
I was playing around with ingredients tonight and came up with this one. I love a good fresh vegetable soup and wanted some extra protein in there without adding meat, so I threw in some beans. I think it has just the right amount of flavor, but is mild enough to allow you to really taste and appreciate all the wonderful fresh vegetables.
I modified Rachel Ray's recipe a bit to fit our nutritional needs.
I used to make this bean dip in a 9 x 13 casserole dish, but my family right now can't eat that much. So, I have reduced it down to fit into a 11 x 7 casserole dish which is just perfect for one meal! My 7 year old daughter requests this often!
A quick, easy, healthier alternative to one of my favorites (chicken, spinach, feta and onion pizza). Easy to make ahead to take for lunch or a snack.
