This soup figured out to be about 127 calories a cup....and it is delicious.
A real budget stretcher. Will feed a family for a week! This soup makes 16 generous servings and keeps for one week in the refrigerator. I haven't tried freezing it. Save some calories by using the Velvetta light product instead of the regular.
This is a low carb supper soup. Not low fat, purposefully. Fats are allowed on this eating plan. Serving size is about 2 cups. I would have put more cauliflower in the soup if I had more and I would have used chicken broth if I had that. But this was made with what I had. Still turned out really good and very similar to the restaurant version.
Vegetarian vegetable soup with no added fat. Very flavorful and low cal. Good for snacking too, full bodied because of pureeing. You can add to individual servings if you want, noodles, rice, protein sources as you want.
This is great soup to have in the late fall or during the winter. It's a thick hearty soup.
I just threw this together one night and it was FABULOUS, filling and good for you! The perfect thick soup without any cream. I am trying to recreate the recipe with accurate measurements, but really I just threw stuff in, so as long as you don't add any extra chicken or barley the nutritional info will be correct. Go ahead and add what you like as far as amount of veggies (sans potatoes).
My 9 yr. old daughter cannot have gluten, so we like to make a lot of soups and chili so we can control the ingredients. Be sure your spices are labeled gluten free! And by the way, this is a NORMAL chili recipe that HAPPENS to be gluten free, so it tastes great :) Any of the spices can be changed to your liking, but the salt and sugar needs to stay in to chemically bind with the acid in the tomatoes. You may mix the spices ahead of time, which we do to keep a quick chili mix on hand as well as cooked and frozen hamburger meat. The canned items are approximate sizes so just get as close as possible and you'll be fine....enjoy!
You could substitute about a pound of your favorite fish/seafood for what's listed here. :)
Lamb stew is Irish penicillin: a rich stew full of potatoes, leeks and carrots that’ll cure whatever ails you. In traditional fashion, nothing here is browned first, just all stewed together. To keep it healthy make sure to trim the lamb of any visible fat before you cook it.

I found a recipe a year ago and changed it to be a little healthier and this is what I've come up with. This soup is fantastic especially on a cold day outside. You can also add less water and shred the turkey thinner and use as a dip. My Mom's always told me to eat my black eyed peas and cabbage on New Years Day for good luck... This is just an easier way to do it and tastier too! Enjoy.

This is the recipe given in the Carrabba's cook book. I'm not sure how close it is to what they serve in the restaurant, but it looks delicious.
