Great smoky, spicy vegan alternative to chicken salad with plenty of fiber and protein.
Peruvian eat legums in many ways, especially as a side dish. This is a tasty one. Super simple and healthy. I like to make a small onion salsa to top it off with, as seen here. In Peru I remember eating this a lot with grilled fish and of course white rice (here served with 1/2 cup of brown) and a salad.
This was an old recipe of my grandmother's, updated so my vegan sister can enjoy! I had great luck with almond milk, but I believe cashew or oat would be even better.
