A mexican style slow cooked pork in tomato based sauce. Great for burritos, tacos or all by itself. Can be served over spanish rice also..yummy!!!
This is a hearty recipe. Everyone seems to love it and it's so simple. Bursting with tomato flavor! Serve with whole wheat muffins and a large side salad or steamed broccoli.

A great make over on a traditional favorite. I used crushed bran flakes cereal in place of the called for cornflakes

French classic. A warm bacon vinegrette served over crispy greens. Pretty enough for a dinner party or great as a main with crusty bread for a summer supper.
Honestly......I learned to make chicken-n-dumplings from scratch from my grandfather. I don't think anything can really beat them with all the butter, cream, and home-made egg dumplings. BUT....this version is a good attempt and it's also much faster and more healthy. Therefore it makes them a weeknight friendly meal. The kids also love it.
Tonight I went a little ethnic and made a Latin favorite, but I have to admit, though I am half Latina, this was my first time making Spanish Chicken and Rice.
