Courgette is the UK name for Zucchini, a tasty crunchy topped vegetarian, high protein bake.
Chili Blanco, or white chili, is light in color, but heavy on flavor. Made with chicken, beans and lots of herbs and spices. Crank up the heat by adding more jalapeno.

This is a basic veggie stir fry with a nice, easy and quick sauce that thickens up. I left out the meat because I usually make it with leftovers, so the type of meat varies. Serve over whatever type of Asian noodles or rice you prefer!
Recipe was modified from Robin Miller on the Food Network (originally used 2 cooked pork chops instead of chicken). Either way - pork or chicken it is equally delicious. Make a double batch and the hubby has lunch for work the next day! Excellent time saver meal when you use leftover rice, chicken from earlier in the week and onion that was chopped earlier in the week too!
This makes a huge bowl. I'm not sure of the serving size or number. I would say at least 24 servings as a side dish.

You have got to try this. Its a little high in fat and calories but I cut the sugar in half and use lowfat milk.
