I cook simple dinners, and this is no exception. It's not dark or crusty like some blackened chicken but it has a heavy cajun flavor with a little bit of herbs like blackened chicken does. Shown here in picture with 1/4 chicken breast done cajun style but not 'blackened'

This was one of those 'throwing stuff from the garden together to use it up' things. Turned out quite yummy if you like cream sauces like I do!! The blackened seasoning is wonderful on pork tenderloin, too!

I was craving chicken ciabatta so here it is minus the bread. My son got to eat the bread. Not Fair!This make two servings. I use a large chicken breast and cut it so I have about a 1/4 of it, calorie calculations are for 1/2.

A simple marinade to liven up your chicken breast with a bit of flavor. I like to cut the chicken up after cooking and portion it out into baggies for my week's lunch of salad with this chicken added into it.
This tastes like the Blackened Chicken Salad at Whole Foods but with much less sodium!
