These tasty muffins are very low calorie, high fiber and ultra low fat. I came up with this recipe about 3 or 4 years ago when I found myself with about 10 lbs of over-ripe bananas. This version is tweaked to be more favourable to reduced calorie (but not sugars) diets. The Craisins add a nice tartness to complement the sweetness of the loaf.

I adapted this recipe to be dairy free from a magazine one. I found it a bit sweet- next time I'll use about half the quantity of splenda. You could replace the splenda and molasses with 1/2 cup (or less) brown sugar, if you prefer.
