I created this recipe from a few different ones I found when looking for something to do with spaghetti squash. The sweet potato in the tomato sauce really makes a difference!
This is a remake of SpoonGirlDeb’s Baked Spaghetti Squash with Ground Turkey Meat Sauce recipe. I added mushrooms, olives, an extra tablespoon of olive oil, some grated Parmesan cheese and leaner turkey. I also increased the number of servings. If you like this, give SpoonGirlDeb applause!

I got this recipe from a co-worker who brought lunch for the both of us one day. It was unlike anything I had had before. The best way to describe it is a mix between dirty rice and red beans and rice. Delicious!
