This is one of my family's very favorite dinners. One of the best things about this recipe is how easy it is to adjust to your own tastes. I entered it in with my true ingredients, which are SPICY! If you don't like it super spicy, adjust your ratio of Sweet Thai chili sauce (found in the grocery store asian food section) and the spicy Sambal Oelek (found in the same section). Try 1/4 cup of sambal oelek and 3/4 cup sweet chili sauce. Also very good with skinless chicken thighs, trimmed. I just ordered PB2 and am looking forward to trying it with this recipe, to cut the fat back even further!

This soup is excellent. Add more red paste or a couple of red chili peppers to zip it up a bit more. galangal and lime leaf can be a bit hard to find but it is worth it if you do. Look in the frozen foods in your asian market for Tom Yum soup base Kit.

This is also great if you do 1/2 chicken and 1/2 shrimp. Green Beans are awesome in this dish and I don't even care for them normally! Makes a great one pot dish, better than take out! This is a double recipe and freezes well - I make some for dinner and freeze the rest into lunch or dinner sized portions and reheat in microwave once thawed. YUM!

Paneng curry is a spicy, sweet red curry made with thick coconut milk. It is one of the more popular Thai dishes due to it's sweet, mild taste. Although it's normally made with chicken, it can also be made with lamb, shrimp, beef or pork. It usually has a thick soup-like consistency. The dish is served with a separate bowl of white (jasmin or pandan) rice.

Note:
