I created this recipe. I may need to tweak the ingredients based on the results.
Results: Took exactly 30 minutes for the toothpick to come out clean, so I don't want to do too much to change the wet to dry ingredient ratio. These came out with a fudge consistency. They are very edible, but taste like they are missing something. I think they could be a tad sweeter. On my next attempt, I may add some chopped dates and see if that helps.
I love this salsa...it tastes fresh and summery all year round. Plus it's packed with antioxidants...and costs less that buying bottled salsa.
This salad is asian inspired. It combines the freshness of salad and the rich, peanutty flavor of satay. The dressing can be altered to suit your taste. Sometimes I will add some marinated firm tofu to the top to mimic chicken satay.
Very filling and contains a healthy amount of fiber, protein and iron while still being low fat.
This recipe literally lives up to the name. I'm was just super hungry & needed more protein & fiber for today, plus I wanted to make something I could munch on throughout the rest of the week. I made a huge pot of jasmine rice to go with it (b/c I'm out of basmati).
Also, I get all my spices from the bulk section of Central Market, it's super cheap & perfect for infrequently used ingredients, you just spend like 50 cents on a little baggy of each. I just happened to have leftovers of all these I used, hence the hodgepodge. This is a great recipe to experiment w/ the necessary herbs & spices.
This salad is a meal for one that can easily be scaled for more people. If you like more protein in your meals, add cooked beef, chicken or tofu (which are not included in the nutritional info).
This is tasty! Not super sweet, but sweet enough to make me happy. The crumble on top is very loose and dry, but it tastes great. Adding a little water to make it clump more might be an idea to play with.
