Flavorful low in fat Italian dish - great over Angel Hair Pasta or your favorite pasta or rice. The key is flavor with garlic, peppers, spices added to cubed zucchini.
I would love to take credit for this recipee but it belongs to my friend Jen who usues authentic spices directly from India, you can however purchase these spices at a specialty Indian store in your area.

I love enchiladas...but.there is too much salt in the canned sauce. You can add 1 teaspoon of salt to this or to your taste. This makes three cups.
My Husband loves meatloaf but I hate to make it because it's so high in calories and fat. I found this wonderful recipe in a wedding cookbook, and Turkey works great in it. Delicious and super moist! Long cooking time though, so good for a hearty Sunday night meal.
