This is a veggie/vegan burrito. The original recipe called for using a whole pound of vegan cheese, but i cut that in half. if you use more than 1/4 cup of cheese on each burrito, then you will need to adjust for the calories. With using the whole pound of cheese, each burrito would be about 601 calories.
threw together a week night crock pot. entering it for my own calorie intake, but feel free to try it!
The molten chocolate cake variation on the 1-minute muffin recipe was created by Linda Sue, and the Mexican variation was created by me, because I adore Mexican hot chocolate and thought that would be great flavor. I have played around with this and I think it's really, really good. I have no idea why the one rater gave it such a mediocre review, because I really think this is amazingly good for such a quick and healthy recipe. Maybe they didn't realize it was not going to be exactly the same as something made with white flour? Make this instead of having an Atkins bar or going on a chocolate binge, I promise it will sate your deep dark cravings! Careful, it's addictive so you may want to split it with someone you love! Enjoy and please do comment/rate if you make it, I love feedback. Also, check out some of my other low carb/glutenfree recipes! I thought this might make a good birthday "cake" for a low carber - if plated prettily and topped with the optional ganache, a squirt of whipped cream and some shaved LC chocolate, it would be really celebratory and won't send you into a blood sugar coma.
This bean dip is easy to throw together in less than 30 minutes and is deeee-licious! My son says it is the best thing to ever happen to him.
This is a yummy vegan casserole! You won't miss the meat!
My kids just love these! Great way to feed them broccoli, cauliflower and carrots!
Dice chicken in bite sized pieces and cook thoroughly. Spray nonstick cooking spray on one side of 2 tortillas and place that side down on a cookie sheet. Combine diced cooked chicken, salsa and cheese in a bowl. Spread mixture on tortillas. Top with remaining tortillas. Bake 16-18 minutes at 350 degrees. Cut into quarters and enjoy with fat free sour cream or remaining salsa. (Must add extra calories for toppings).
pulled this from the back of a Kroger can of black beans - we use it as filling for burritos
This recipe originally called for whip cream, olive oil, and regular swiss cheese. I substituted evaporated skim milk, spray olive oil, and 2% swiss cheese to reduce calories from over 700 to 351 per serving.
This is a super quick and super easy, lightened up version of one of my family's favorite meals.

I make my own guacamole with the avocado by just adding garlic salt and chili powder to taste. You could lessen the sodium if you used your own spices too.
