This semi-homemade veggie beef soup tastes AWESOME! It is soooo easy to make, but your friends and family will think you are a master chef when they taste it. This is my favorite secret recipe passed down to me from my mom.
This was a editor's choice from Cooking Light Magazine. It was very heavy on salt originally, so I revamped cutting the salt in half. Also fixed it for the slow cooker
I came up with this recipe after reviewing many recipes with similar ingredients. I believe the important thing is customizing recipes to suit your family's taste. My husband loved this recipe! I cook the chicken in the slow cooker all night then shred it the next day (the slow cooking makes it easier to shred). The picture does not do this dish justice.

This stoop (somewhere between a stew and a soup) is just something I came up with. It is loosely based on a Chicken Tortilla Soup, and has a lot of the same flavors. This is one of those recipes that is almost endlessly customizable... you could add black beans, use a different grain, add in peppers, or change up the spices. My husband really loved this on a cold, icy night! AND, it made a TON of left-overs!

Slow cooker version of the Greek Avgolemono. Americanized version which uses cream instead of eggs to thicken the soup which makes it the perfect candidate for a crock pot.
